We serve regional German food guided by native produce, apart from the fantastic white asparagus. Which is grown on the chefs family farm in Northern Germany. Influences range from family classics to highlighting spring’s bounty.

The White Asparagus

The White Asparagus, founded by head chef Sebastian Delamothe, is an ode to the (adjective subtle/rich/unknown?) cuisine of Northern Germany. Using primarily white asparagus grown on his third generation family owned white asparagus farm, Delamothe endeavours to show you how good the lesser known (yet superior) brother of green asparagus is.
Having worked the last three years on superyachts for the mega wealthy and in Michelin starred restaurants, his experience is founded in the finer forms of dining. The menu for his two month residency at The Cuckoo N1 will take inspiration from his grandmother’s large white asparagus repertoire. Expect spring vegetables and ingredients foraged from Hampstead Heath mixed with the wonderful sweet asparagus. Embracing techniques like preserving and foraging Delamothe is working on the perceived ideas on where we get our food from. We don’t all have a family farm producing the best white asparagus, but we could all do a spot of foraging.
